Ready for the table in no time, these enchiladas are a tasty recipe that the whole family will enjoy.
Ingredients
- 300g lean minced beef
- 1 tbsp of olive oil
- 1 large tin of chopped tomatoes
- 8 tbsp of tomato based salsa
- 1 tsp of chilli powder
- 2 green chilli peppers, sliced
- 4 flour tortillas
- 100g of re-fried beans
- 4 tbsp of low fat cheddar cheese

Method
Heat the oil in a non-stick frying pan and cook the beef over a medium heat until browned.
Drain off excess fat and stir in the tomatoes, salsa, chilli pepper and chilli, bring to a boil and simmer for 10 minutes. It is fine to use enchilada sauce for convenience.
Spread the tortillas with the re-fried beans, then spoon the beef down the centre of the tortilla.
Roll up and sprinkle with cheese. Cook for 3-4 minutes on medium heat in the microwave. Alternatively, heat through at 180 degrees for 15 minutes.
